I don't know if it is just me or if other people do it too, but I tend to shake hands differently based on the person.
The main difference is gender based. I am not going to crush some girl or woman's hand, because they tend to be more delicate, compared to a guy's hand.
When I was in church for Christmas, you get to the part where you shake everyone's hand (sorry, I forget what it's called, I do not attend church regularly) and I get through my family, wishing Merry Christmas and I Love You, etcetera. Then you look around to people near you and shake hands. I look behind me and there is a couple behind me. I shake the gals hand first, a firm, yet gentle handshake. Then I shake the guy's hand, and it's different from the girls. The handshake is stronger, for lack of adjective. Even when shaking a kid's hand, you aren't going to shake with the same vigor you did with a large (muscular) guy.
It's something done automatic, your mind makes the split second decision, as your hand is going in for the handshake, judging by the person's outward appearance, how you are going to shake their hand.
